Season’s Feastings at the Fullerton Hotels

This December, take a gastronomical trip around the world with The Fullerton Hotel and The Fullerton Bay Hotel Singapore.

As 2021 draws to a close, you’re probably looking forward to a joyous and restful season with your nearest and dearest. Never mind that some travel plans may still be on hold – the Fullerton Hotels have lined up an enticing range of festive menus featuring exotic and familiar flavours from all around the globe. What better way to celebrate than over a heart-warming, belly-pleasing meal with loved ones? Here’s to a month of good cheer and epicurean delights.

The cosy tête-à-tête: Festive Afternoon Tea

Where: The Courtyard, The Fullerton Hotel Singapore; and The Landing Point, The Fullerton Bay Hotel Singapore

When: Daily, 1 Dec 2021 – 1 Jan 2022; 1500 – 1730 hrs

Prices: From $51++ (The Courtyard); $60++ (The Landing Point)

Catch up with a good pal over delectable treats, from savoury to tart and sweet. Each bite packs a mini explosion of flavours and textures. Highlights include the Manuka honey-glazed ham with cranberries chutney on pumpkin bagel; Norwegian smoked salmon dill cream cheese blinis; Lemon myrtle and Tasmania seafood in mini muff; and Biryani spice turkey mayo in a mini sesame cup – a tasty remix of The Fullerton’s new Biryani Christmas Turkey. If you find yourself craving for more, you’d be pleased to know you can order the whole bird for your yule table at home (details below).

Note: The same menu is served at both restaurants, except that each Afternoon Tea set at The Landing Point comes with a glass of Sangre de Toro non-alcoholic rosé wine.

The hearty fambam feast: Festive Le Brunch by the Bay

Where: La Brasserie, The Fullerton Bay Hotel

When: Weekends, 4, 5, 11, 12, 18, 19, 26 Dec 2021 & 2 Jan 2022; 1200 – 1500 hrs

Prices: From $158 per adult; $79 per child (aged 6-11)

No worries if you sleep in on weekends – you’d still be in time for a satisfying brunch buffet at La Brasserie. Festive delights include the Fine herb crusted Atlantic salmon served with caramelised winter vegetables, red wine blaukraut, potato mousseline, sauce Nantua, and dill oil; and the Traditional herb roasted butterball turkey with the full works and truffle winter vegetable stuffing. Specialties offered only on Christmas Day and New Year’s Day are Slow-roasted Angus prime ribs, Roasted rosemary Colorado lamb leg with lingonberries and mint sauce, and Bourbon orange-glazed Champagne ham with cinnamon pineapple sauce. Those with a sweet tooth will be spoilt for choice at the array of festive dessert platters on display, from traditional stollen and chocolate Baileys tart to warm apricot bread and butter pudding with vanilla sauce.

Note: Fancy a tipple? There’s an optional alcoholic beverage add-on. For S$258* per adult, get free-flowing Ruinart Blanc de Blanc Champagne, house red and white wines, Tiger and Heineken beer, and signature Bloody Mary.

The elegant five-course meal: Christmas Eve Set Dinner

Where: The Clifford Pier, The Fullerton Bay Hotel

When: 24 Dec 2021; 1830 – 2230 hrs

Prices: From $155 per adult

After a stroll by the bay at sunset, charm your date with fine food and conversation. The set dinner at The Clifford Pier begins with the Trio of Salmon, consisting of dill salmon gravlax, house-smoked salmon and beetroot-cured salmon, topped with Queen caviar. Next up is the Hokkaido Corn Velouté with sourdough crumble, hand-peeled snow crab and a refreshing, palate-cleansing Yuzu Sorbet with lychee and berries. For mains, choose between Surf and Turf (Angus Tenderloin, Hokkaido scallop, saffron mash, fine beans, baby carrot, morel jus) or Roasted Turkey Roulade served with Brussels sprouts, blaukraut, chestnut stuffing, cranberry chutney and giblet sauce. Remember to leave room for dessert – an indulgent Giresun Hazelnut Crunch Logcomposed of hazelnut praline feuilletine chocolate, Araguani 70% chocolate ganache, Gianduja crème, and praline butter. Mm.

Note: Free-flowing Veuve Clicquot Champagne, house red and white wines, and beers are available for an additional $110.

The more-the-merrier spread: Boxing Day Brunch

Where: Town Restaurant, The Fullerton Hotel Singapore

When: 26 Dec 2021; 1230 -1600 hrs

Prices: From $265 per adult, $130 per child (aged 6-11), $50 for every second child (aged 5 years & below)

A scrumptious start to the day after Christmas will surely keep spirits soaring high. There’s something for everyone at Town Restaurant. Egg fans should not miss the Christmas Egg Special, a heavenly match of organic poached eggs with lobster ragout, truffle hollandaise and Avruga caviar. Meat lovers will dig – quite literally! – the array of festive roasts at the live carving station. Think Acacia Honey-glazed Champagne Ham with lingonberries and roasted apples; Premium Angus Striploin with potato mousseline, black truffle sauce; and Rosemary and Garlic-studded Boneless Leg of Lamb with mint jelly and natural jus. And, for those watching their waistlines after days of feasting, there’s the lighter Apricot and Herb-crusted Norwegian Salmon with roasted vegetable and sauce Choron.

The family-friendly fare: Starlight Menu for New Year’s Eve

Where: Jade, The Fullerton Hotel Singapore

When: 31 Dec 2021; 1830 – 2200 hrs

Prices: $209 per person

Look forward a better year with good health, warmth and togetherness – that’s the wish of

Executive Chef Leong Chee Yeng when he composed his New Year’s Eve menu. Exquisite and nourishing, the line-up will make your mouth water: Double-boiled coconut juice with kampong chicken; Snow lotus and dried scallop served in coconut; Yuan Yang hor fun with sautéed Boston lobster in truffle silken egg sauce; shaved almond ice with “Three Treasures” and caramel jelly; Deep-fried sesame ball stuffed with red bean paste and banana. Bring the parent folk – they might need a palate reset after days of Christmas roast!

The festive takeaways for stay-home celebrations

  • Served with aromatic saffron basmati rice, vegetable masala, paneer cheese, achar pachranga, and korma sauce, the Roasted Biryani Turkey is a definite crowd-pleaser.

With a whopping 26 items in their Festive Takeaway Line-up, The Fullerton hotels are all set to meet your stay-home party and gifting needs. Standout items in the list are the Roast Biryani Turkey ($218 nett for 6-7kg); Limited Edition Festive Mulled Wine ($58 nett for a 500ml bottle; only 100 bottles available); Vanilla Mont Blanc Yule Log Cake ($75 nett for 900g); Classic Fruity Panettone ($58 nett for large) – and this year’s new flavour, the Strawberry Panettone ($68 nett for large).

The countdown to 2022: New Year’s Eve Table Package

Where: Lantern, The Fullerton Bay Hotel

Prices: $1,600 nett for five people; $660 nett for two

Round up your favourite people for a fun last night of the year. Admire the beautiful city skyline from this rooftop bar as you toast to the year’s best moments, and count down to a brighter 2022 with a glass of bubbly in hand. The five-person package includes one Sharing Snack Platter, and four bottles of champagne or two bottles of spirits. The two-person package includes a Sharing Snack Platter, and a bottle of champagne and a bottle of spirit. Portioned to suit parties of up to 5 and 3 for each package, the Sharing Snack Platter comprises: Blue swimmer crab in tobiko summer rice paper roll with tamarind and peanut dip; Sakura ebi shio kombu & mentaiko angel hair pasta salad; plant-based OmniSpam fries; Maine lobster and seafood salad in brioche bun; and Truffled chicken pops, ikura and Parmesan.
